
Broiled Trout (Abruzzo)

Ingredients
Trout - 6 small
Salt and pepper
Parsley, finely chopped - 4-6 sprigs
Garlic, finely chopped - -2 cloves
Olive oil
Lemon, cut in wedges - 1
Wash and clean the trout. Sprinkle the cavities lightly with salt and pepper, and fill with the finely chopped parsley and garlic. Brush the fish lightly with olive oil and broil them over charcoal if possible. Turn after 5 minutes, brush lightly with oil again, and cook the other side. Serve immediately, sprinkled with a little more olive oil and garnished with lemon wedges.
