Chicken with Tomatoes and Sweet Peppers (Abruzzo)

Ingredients

Tender chicken - 3 - 3 1/2 pounds

Olive oil - 1/2 cup

Onion, chopped - 1 small

Salt and pepper

Ripe tomatoes, peeled, seeded and chopped - 1 pound

Sweet peppers - 2 large

 

Chop the chicken into serving pieces. Heat the oil in the heatproof casserole and saute the onion until golden. Add the pieces of chicken and continue to saute gently, turning them to brown them all over. Season to taste with salt and pepper, and add the tomatoes. Cover the casserole and simmer gently for 1/2 hour.

In the meantime, char the peppers over a high flame or put them under the broiler as near to the source of heat as possible, until their skins blacken and blister all over. Peel off their thin outer skins and cut the peppers into strips, discarding cores and seeds. Add the pepper strips to the casserole with the chicken and continue to simmer gently for about 15 minutes longer, or until the chicken and peppers are soft.

Serves 4.
