
Roast Leg of Lamb Abruzzo Style (Abruzzo)

Ingredients
Leg of lamb - 3 - 3 1/2 pounds
Salt and pepper
Olive oil - 1/2 cup
Onion, sliced - 1 small
Juice of 1/2 lemon
Grated pecorino or parmesan - 2/3 cup
Wipe the meat with a damp cloth, sprinkle it with salt and pepper, and leave for 1 hour.
Pour the oil into a shallow ovenproof casserole with a lid and add the onion and the meat. Cover and bake in a moderate oven (375F) for 1 hour, or until tender, turning the meat from time to time and basting it occasionally with the pan juices.
Just before serving, sprinkle the meat with lemon juice and grated cheese.
