Boiled Pork (Abruzzo)

Meat

Ingredients

Mixed salted pork - 3 1/2 - 4 pounds

Wine vinegar - 2-3 tbsps

Bay leaves - 3

Rosemary - 1 sprig

Garlic, crushed - 2 cloves

Hot chili pepper - small piece

Peppercorns - 6

Salt

Tomato paste - 4 tsps

 

Soak the meat overnight in cold water to which you have added the vinegar. This will rid it of some of the salt. Cut up the skin and the snout, split the trotters and put them all in a casserole, preferably an earthenware one. Add the herbs, garlic, chili, peppercorns and a little salt. Pour in plenty of water, cover the casserole and cook very slowly for 4 hours.

Half an hour before the end of cooking time, stir in the tomato paste. Serve the pork very hot with the sauce, which by now should be considerably reduced.
