Matchstick Noodles (Abruzzo)

The dough of this dish is prepared in the usual manner, rolled into strips and placed on the steel wires of the "guitar", then rolled out with a rolling pin to give matchstick- like thin strips. These are cooked in boiling, salted water and served with a meat or tomato sauce and a generous portion of pecorino cheese.
