
Cheese Pie (Abruzzo)

Ingredients:
All-purpose flour - 2 cups
Salt
Eggs - 6-7
Olive oil
Scamora cheese - 1/4 pound
Grated pecorino or parmesan - 1 1/2 cups
Pepper
Sift the flour and a pinch of salt into a bowl. Add 2 eggs and work with the flour to a dough, adding a third egg if it is still too stiff. Lightly brush a baking sheet with olive oil and lline it with the pastry. Trim of untidy edges.
Lightly beat 4 eggs, add the diced and grated cheeses and season to taste with salt and pepper. Spread this mixture down to the middle of the pastry sheet. Fold one side of the pastry over to enclose the filling completely, sealing the edges firmly with a fork. Bake at once in a moderate oven for about 30 minutes, or until pastry is light golden color.
