Ricotta Cheese Fritters (Rome)

Ingredients

Almond macaroons - 1/2 pound

Fresh ricotta or good quality cottage cheese - 1 pound

Ground cinnamon - pinch

Eggs - 2 large

Flour

Egg, beaten - 1

Fine dry breadcrumbs

Lard or butter for frying

Confectioners Sugar

 

Crush the macaroons to a powder. Put them in a bowl and add the ricotta, cinnamon to taste and 2 eggs. Mix thoroughly. Flour your hands, break off pieces of the mixture and roll them into balls. Dip into beaten egg and coat with breadcrumbs.

Fry the little balls in lard or butter, a few at a time, until golden brown. Take from the pan with a perforated spoon, drain on paper towels and sprinkle lightly with confectioners sugar. Serve hot or cold.
