Eggs Cooked to look like Tripe, Roman Style (Rome)

Ingredients

Eggs- 8

Grated parmesan cheese - 10 tbsps

Salt and pepper

Olive oil 

Hot meat gravy or tomato sauce - 1 1/4 cups

Mint, finely chopped - a few leaves

 

Break the eggs into a bowl, add half the parmesan cheese and season to taste with salt and pepper. Beat lightly with a fork.

Heat a little oil in a frying pan and pour in about a quarter of the beaten egg mixture. Lower the heat and, as the omelette begins to cook under underneath, prick with a fork and run a knife around the edges. When the underside is golden, turn the omelette over and brown it on the other side. Repeat thos with the remaining egg mix, making 4 omelettes.

Cut the omelettes into strips to resemble tripe and arrange a layer at the bottom of a fireproof baking dish. Sprinkle this with grated cheese, hot sauce and a little mint. Repeat this until all ingredients are used up, ending with a layer of cheese. Heat in a moderate oven (375F) and serve immediately.
