Mushrooms with Garlic and Mint (Rome)

Appetizers

Ingredients

Fresh field mushrooms - 2 pounds

Olive oil - 1/2 cup

Anchovy fillets, finely chopped - 3-4 

Garlic, crushed - 2 cloves

Ripe tomatoes, peeled, seeded and chopped - 6 large

Mint, finely chopped - 2-3 sprigs

Salt and pepper

Slices of french bread fried in butter

 

Clean and wash the mushrooms and cut them into slices. Heat the oil in a shallow pan, add the anchovies and cook them until dissolved to a paste. Add the mushrooms, garlic and tomatoes, the mint, a little salt and a good sprinkling of freshly ground pepper. Cover the pan and cook over a brisk heat, stirring from time to time, for about 15 minutes. Discard the garlic and serve mushrooms very hot garnished with fried bread.
