
Fava Beans with Bacon (Rome)
Ingredients
Shelled fresh fava beans - 1 pound
Butter or oil - 4 tsps
Lean bacon, diced - 2-3 slices
Onion, finely chopped - 1 small
Salt and pepper
Stock or water
Melt the butter in a pan and saute the bacon and onion over a low heat until golden. Add the beans, season with salt and pepper, and moisten with a few tbsps of stock or water. Increase the heat and cook briskly for 20 minutes. Serve hot.
