
Fried Artichokes (Rome)

Ingredients
Artichokes - 12 young
Garlic, finely chopped- 2 cloves
Mint, finely chopped - 3-4 sprigs
Salt and pepper
Olive oil - 2/3 cup
Remove the tougher outer leaves from the artichokes and cut off the stalks, leaving only the tenderest part. Open out the middle slightly and into each artichoke, put a little of the garlic and mint, and a pinch of salt and pepper. Arrange the artichokes side by side in a heavy pan. Trickle the oil over them and add 2 cups water. Cover and cook over a low heat for about 1 hour. Uncover the pan and reduce the cooking juices over a brisk heat. Serve the artichokes hot or cold.
