Broiled Pork Chops (Rome)

Meat

Ingredients

Pork chops - 12 small

Lard

Salt and pepper

Bread, homemade if possible - 12 slices

 

Spread a little lard on both sides of the chops and season lightly with salt and pepper. Lay the pieces of bread flat on the bottom of the broiling pan. Arrange the chops on the rack over the bread so that it catches the drippings. Broil under a moderate heat until one side is brown and crisp. Turn the chops and brown them on the other side. Make sure the meat is thoroughly cooked. Serve the chops, one on each slice of bread, sprinkled with freshly ground pepper.

Serves 6
