
Baby Lamb Chops (Rome)

Ingredients
Baby lamb chops - 3 - 3 1/2 pounds
Artichokes - 6 young
Lemon - 1
Butter - 4 tbsps
Olive oil - 4 tbsps
Ham fat - 2 tbsps
Garlic, finely chopped - 1 clove
Onion, finely chopped - 1 small
Marjoram, finely chopped - 2-3 sprigs
Salt and pepper
Dry white wine - 1 cup
Tomato paste - 4 tsps
Remove the hard leaves of the artichokes, cut into wedges and wash them in water to which the juice of 1 lemon has been added.
Heat the butter and oil in a large pan and saute the lamb with ham fat, garlic, onion and marjoram. Season with salt and pepper, moisten with wine and cook until it evaporates. Dilute the tomato paste with cup of water, and add this to the pan, stirring gently. Add the artichokes, check seasoning, cover the pan and cook over low heat for 30 minutes.
