
Sweet Macaroni with Cheese (Rome)

Ingredients
Macaroni - 1 1/4 pounds
Salt
Fresh ricotta or cottage cheese - 1 cup
Warm milk - 1/2 cup
Sugar- 2 1/2 tbsps
Ground cinnamon - pinch
Pour the macaroni into a large pan of rapidly boiling salted water, stir and cook for about 10 minutes, or until tender. Beat the ricotta, milk, sugar and cinnamon together until smooth. Drain the macaroni and pour into a heated dish. Add the ricotta dressing, mix well and serve immediately.
