Golden Bread (Rome)

Ingredients

Bread, medium-thick - 12 slices

Warm milk - 2/3 cup

Eggs - 2-3

Salt

Oil or lard for shallow frying

 

Trim the crusts from the bread and arrange the slices in a flat dish. Sprinkle with the milk. Beat the eggs with a pinch of salt.. Pour them over the bread slices, covering them and leave until the bread has absorbed the eggs. 

Heat a good quantity of olive oil, not however enough for deep-frying. Lift out the slices of bread, one at a time, using a spatula and place carefully in the hot oil. Fry on both sides until golden brown. Take from the pan with a perforated spoon. Drain on paper towels and put into a hot oven until all the slices are fried. Serve hot.
