Sweet Pizza (Umbria)

Ingredients

Once risen bread dough, made with 2 1/2 cups flour - 1 pound

Grated rind of 1 lemon

Granulated sugar -  3tbsps

Olive oil - 1/4 cup

Egg yolk - 1

Sweet white wine - 2/3 cup

Lukewarm milk

Oil or butter and fine dry breadcrumbs for cake pan

Egg, beaten (optional) - 1

Confectioners sugar

 

Punch down the bread dough and knead it again, adding the lemon rind, sugar, oil, egg yolk, wine and if necessary, a little milk. The dough should be perfectly smooth, but not too stiff. Work it thoroughly until it is light and springy and comes away from the pastry board in one piece.

Grease a deep, wide cake pan and sprinkle it with breadcrumbs. Add the pizza dough. Cover with a cloth and leave to rise again in a warm place for 1 hour. Brush the top with beaten egg. Bake in a moderately hot oven (400F) for about 40 minutes without opening the oven door.

Sprinkle with confectioners sugar before serving
