Pine Nut Fondants (Umbria)

Ingredients

Pine nuts - 1/2 pound

Sugar - 1 1/2 cups

Water - 1 cup

Candied orange peel cut into strips (Optional) - 1/4 pound

Circles of rice paper

 

Spread the pine nuts on a baking sheet and dry them out slightly in a very low oven.

Put the water into a pan and add the sugar. Let this dissolve slowly, then bring to the boil at 240F. Pour the boiled syrup into a bowl and stir it with a wooden spoon until it is thick and white or opaque. Knead it well  until it has an even texture all through. Add the nuts and orange peel if used. Put small balls of the mixture on the circles of rice paper and leave to cool, trimming off surplus bits of rice paper from around each fondant later.
