Cuttlefish or Squid Marche Style (Umbria)

Ingredients

Baby cuttlefish or squid - 3 pounds

Salt

Olive oil - 1/2 cup

Garlic, crushed - 2 cloves

Parsley, finely chopped- 3-4 sprigs

Hot chili pepper, finely chopped - small piece

Dry white wine - 1 cup

Hot stock - 2/3 cup

 

Clean the cuttlefish or squid as directed in the preceding recipe, rinse them thoroughly in salted water and dry them well. Heat the oil and fry the garlic gently until golden brown; discard the garlic and add the cuttlefish, parsley, a little salt and the chili. Cook over a brisk heat for about 10 minutes. Moisten with the wine and let it reduce. Then add a little hot stock (or water), lower the heat, cover and simmer gently for about 15 minutes longer, or until cuttlefish are tender.
