
Fresh Fava, Lima or Broad Beans Country Style (Umbria)

Fresh beans - 3 pounds
Salt and pepper
Olive oil
Green onions, finely chopped - 1-2
Do not shell the beans until just before cooking. Then cook them in plenty of unsalted, boiling water. They should cook slowly and absorb quite a lot of liquid. As soon as they are tender, drain them, turn them into a salad bowl and dress them while still hot with a little salt, a good sprinkling of pepper, plenty of olive oil and the finely chopped onion. Mix well and serve.
