
Mixed Kebabs Spoleto Style (Umbria)
Meat
Ingredients
Loin of pork - 6 small slices
Boned chicken - 6 small pieces
Pig's liver - 6 slices
Baby lamb chops - 6
Streaky bacon - 24 slices
Sage - 24 leaves
Rosemary, finely chopped - 2 sprigs
Pepper
Olive oil - 1/2 cup
Juniper berries - 3-4
Salt
Thread a piece of pork, chicken, liver and a lamb chop on to each of 6 skewers, alternating them with a slice of bacon and a leaf of sage; sprinkle each skewers in a wide shallow dish, sprinkle them with pepper and pour the olive oil over them. Add the juniper berries and leave for 5 to 6 hours.
Cook the skewers over charcoal if possible, or under a very hot broiler for 15 minutes, turning frequently. Serve as soon as the meat is cooked, lightly sprinkled with salt. Alternatively, the skewers may be cooked in a hot oven, placed on a rack in a baking pan.
