
Consumme with Meat Dumplings Urbino Style (Umbria)

Ingredients
Finely ground beef - 1 pound
Spinach, cooked - 3/4 pound
Beef marrow - 1 1/2 oz
Grated parmesan cheese - 1 cup
Soft breadcrumbs - 2 1/2 cups
Softened butter - 3 tbsps
Eggs - 5
Freshly grated nutmeg
Salt
Consumme - 4 pints
The meat should be ground to a smooth paste. Squeeze the cooked spinach dry and chop it very finely. Chop the marrow very finely. Mix the meat, spinach, marrow, parmesan cheese, breadcrumbs, butter and eggs to a smooth paste, and season to taste with grated nutmeg and salt. Bring the consumme to the boil. Put the meat mixture into a colander and press it through the holes into the consumme. Simmer for 5 minutes and serve with plenty of additional grated parmesan cheese.
