Spaghetti with Bacon (Umbria)

Pasta

Ingredients

Spaghetti - 1 1/2 pounds

Salt

Olive oil - 2 1/2 tbsps

Bacon, diced - 1/2 pound

Onion, thinly sliced - 1

Ripe tomatoes, peeled and chopped - 1 1/2 pounds

Marjoram, finely chopped - 1 sprig

Pepper

Grated pecorino or parmesan cheese

 

Bring a large pan of salted water to a rapid boil and add the spaghetti. While this is cooking, prepare the sauce.

Heat the oil in a pan and fry the diced bacon gently over a low heat until all the fat has run out. Add the onion and continue cooking gently until transparent; then add the tomatoes, marjoram, a little salt and a good sprinkling of pepper. Raise the heat and cook briskly for 10 minutes.

By this time the spaghetti will be tender. Drain thoroughly and turn it into a deep heated serving dish. Dress with the bacon sauce and grated pecorino cheese and serve immediately.

Serves 6
