Aniseed Wafers (Tuscany)

Ingredients

All purpose flour - 2 cups

Baking powder - 1 tsp

Butter - 7 tbsps

Granulated sugar - 3 tbsps

Anise seeds - 1 tsp

Eggs - 2

Milk - 5 tbsps

 

Sift the flour and baking powder into a bowl, and rub in the butter. Add the sugar, anise seeds, eggs and milk, and mix thoroughly with a wooden spoon. Work to a smooth dough. Break off small pieces and roll them into balls no bigger than a walnut. Roll each one out into a thin round wafer.

Traditionally, the wafers are cooked in a special gadget similar to a waffle iron, which is heated in a fire. However, they can also be cooked on both sides on a hot griddle or heavy iron frying pan. They should be crisp and golden.
