Mushrooms Cooked Like Tripe (Tuscany)

Ingredients

Fresh field or cultivated mushrooms - 1 1/2 pounds

Olive oil - 5 tbsps

Garlic, crushed - 2 cloves

Tomato paste - 4 tsps

Salt

Oregano - 1 tsp

 

Clean the mushrooms and cut into medium-thick slices. Heat the oil and saute the garlic gently until it begins to brown; discard it and add the mushrooms. Dilute the tomato paste with a little hot water and add it to the pan. Season to taste with salt, sprinkle with oregano and continue cooking over a low heat for about 15 minutes, or until the mushrooms are tender.

Serves 3-4
