Fava Beans with Bacon (Tuscany)

Ingredients

Very fresh young fava beans - 5 pounds

Olive oil - 1/2 cup

Diced bacon - 1 cup

Onion, sliced - 1 small

Parsley, finely chopped - 2 sprigs

Salt

Dry white wine - 1/2 cup

Pepper

 

Shell the beans and soak them for several hours in water. Heat the oil in a large pan and saute the bacon until it begins to change color. Add the onion and parsley. When the onion is golden brown, stir in the beans, salt lightly and cook for about 15 to 20 minutes, or until the beans are tender. Add the wine and continue cooking until reduced. Sprinkle with pepper and serve very hot.
