Beans in a Flask (Tuscany)

Wash 1 pound shelled fresh white beans and pour them into a wine flask (about 7 1/2 cups capacity). Do not fill flask all the way, the beans must have room to swell. Add 1/2 cup oil, a sprig of sage, 2 cups water, 2 cloves garlic, but no salt. Push a little tow or straw loosely into the neck of the flask, leaving an opening for the steam to escape.

Turn the cooked beans into a bowl, season them with salt and pepper and serve hot or cold.

Serves 6
