Fresh White Beans with Tuna Fish (Tuscany)

Ingredients

Fresh white (Haricot) beans - 1 pound

Salt

Olive oil - 1/2 cup

Garlic, crushed - 1 clove

Ripe tomatoes, peeled and chopped - 5-6 large

Tuna fish in oil, drained and cut in pieces - 12 oz

Basil, finely chopped - 2-3 sprigs

Pepper

 

Cook the beans in salted water until tender, about 1 1/2 hours. Drain. Heat the oil in a large pan and saute the garlic until brown. Discard the garlic and add the tomatoes. Sprinkle lightly with salt and cook for 10 minutes over a brisk heat. Stir in the beans and the pieces of tuna, and sprinkle with basil and plenty of pepper. Cook for 10 minutes over a low heat and serve very hot.

Serves 6
