
White Beans Cooked Like Small Birds (Tuscany)

Ingredients
Fresh white (haricot) beans - 1 pound
Salt
Olive oil - 3/4 cup
Garlic, crushed - 2 cloves
Sage - 1 sprig
Italian peeled tomatoes, chopped - 14 oz can
Pepper
If dried beans are used, they will need to be soaked overnight.
Cook the beans in salted water (about 90 minutes). Heat the oil in a large pan and saute the garlic until brown. Discard the garlic and add the beans, sage and tomatoes. Season to taste with salt and pepper, and cook for about 20 minutes or until sauce is thick.
