Baked Artichokes (Tuscany)

Vegeterian

Ingredients

Artichokes - 6

Lemon - 1

Flour 

Olive oil - 1 cup

Salt and pepper

Eggs - 6

Milk - 4 tbsps

 

Remove the outer leaves of the artichokes, leaving only the more tender ones. Cut into thick slices. Soak in water acidulated with lemon juice for 15 minutes. Drain, dry and dust with flour.

Heat half the oil in a wide pan, add the slices of artichoke and cook over a low heat until they are golden brown on both sides. This will take between 20-30 minutes. Sprinkle lightly with salt and lay them in one layer in a shallow fireproof baking dish. Pour the remaining oil over the top.

Beat the eggs, adding salt, pepper and the milk. Pour this mixture over the artichokes and bake in a moderately hot oven (400F) for about 15 to 20 minutes or until eggs are set. Serve immediately.
