
Marinated Fish Tuscan Style (Tuscany)

Ingredients
Grey mullet, fried - 2 pounds
OR
Baby cuttlefish and octopus - 2 pounds
Olive oil - 2-3 tbsps
Garlic, finely chopped - 2 cloves
Onion, thinly sliced - 1 small
Sage - 3-4 sprigs
Bay leaves - 2
Rosemary - 2 sprigs
Wine vinegar - 2 1/2 cups
Cut the grey mullet, if used, into large pieces. Arrange the fish in an earthenware dish. Heat the oil and saute the garlic and onion until golden, then add the herbs and vinegar. Bring to a boil. Pour this mixture over the fish and leave in a cool place for 2 days, covered, before serving.
