
Meat Rissoles with Sage (Tuscany)

Ingredients
Ground lean beef - 1 1/2 cups
Sage, finely chopped - 6 leaves
Butter - 6 tbsps
Salt - 1/4 tsp
Grated parmesan (optional) - 2 1/2 tbsps
Flour
Marsala - 1/4 cup
Mix the beef, sage, 2 tbsps of butter, salt and the parmesan cheese, if used, to a smooth paste. With floured hands, break off pieces and shape them into rissoles. Dredge them with flour. Melt the remaining butter and fry the rissoles until brown on both sides, about 5 to 7 minutes. Sprinkle with marsala and let it reduce. Serve the rissoles immediately with their cooking juices.
