Florentine Steaks (Tuscany)

Allow a 3 pound steak - prime, sirloin or tbone - for 6, and broil over charcoal if possible. Otherwise use either gas or electricity. Keep the meat about 3 inches from the heat and cook for about 4 minutes on each side - a florentine steak should never be overcooked. Sprinkle each side with salt and freshly ground pepper about 1 minute before it is ready. Serve immediately, garnished with lemon wedges.
