Grated Noodle Soup (Tuscany)

Ingredients

All purpose flour - 3 cups

Salt and grated nutmeg

Eggs - 3 large

Meat stock - 7 1/2 cups

Grated parmesan cheese

 

Make a very stiff dough with the flour, a pinch of salt and grated nutmeg and the eggs. Knead thoroughly and leave to rest until dry enough to grate. Then grate it on the coarsest side of the cheese grater and spread out on a cloth to dry.

Bring the stock to a boil, add the grated noodles and cook for about 2 minutes or until the stock stops foaming. Serve with a large bowl of grated parmesan.

Serves 6
