
Chicken Livers on Toast (Tuscany)

Chicken Livers - 1/2 pound
Olive oil - 4 tsps
Butter - 2 tbsps
Ham fat - 2 tbsps
Onion - 3-4 slices
Sage - 1 sprig
Salt
Bread, halved - 6 slices
Lemon juice
Grated parmesan cheese - 4 tsps
Clean the chicken livers and chop them into small pieces. Heat the oil, butter and ham fat, and saute the onion gently until golden brown. Add the chicken livers and the sage. Season with salt and cook over a low heat for about 10 minutes. Meanwhile, toast the bread. Add a few drops of lemon juice and the cheese to the pour any remaining fat over the top, and put into a hot oven for a minute or so to heat through.
