Carnival Fritters or Knots (Emilia-Romagna)

Ingredients

All purpose flour - 4 cups

Butter - 2 tbsps

Egg yolks, lightly beaten - 3

Egg white, lightly mixed - 1

Granulated sugar - 2 1/2 tbsps

Salt - 1 tsp

Vanilla powder or extract to taste - pinch

White wine - 1 cup

Oil for deep frying

Confectioners sugar

 

Sift the flour and work in butter. Add the egg yolks, egg white, sugar, salt, vanilla and enough wine to make a smooth, pliable, fairly soft dough. Wrap in wax paper and leave to cool for 1 hour.

Roll the dough out very thinly, then cut it into long ribbons about 1/2 inch wide and 8 inches long. Carefully tie these into knots or bows and fry them quickly in deep boiling oil until golden. Drain the fritters on absorbant paper, dust with confectioners sugar and serve, either alone, or with fruit salad, cold mousse or similar types of sweet dishes.
