
Sweet Lemon Fritters (Emilia-Romagna)

Eggs -4
Granulated sugar - 5 tbsps
All purpose flour - 2 1/2 cups
Mild Olive Oil - 5 tbsps
Brandy - 5 tsps
Salt - pinch
Vanilla Extract - 1/2 tsp
Grated rind of 4 lemons
Oil for deep frying
Confectioners sugar
Beat the eggs lightly, add the sugar and beat until fluffy. Add the flour, oil, brandy, salt, vanilla and grated lemon rind, and mix thoroughly with a wooden spoon until well blended.
Heat a large pan of oil for deep frying. Drop teaspoonfuls of the fritter batter into the oil, using 2 tsps to shape it into neat balls and fry until puffed and golden. The fritter will swell, so do not attempt to fry too many at a time. Drain on absorbant paper, dust generously with confectioners sugar and serve immediately.
