
Baked Tortellini Noodles Bologna Style (Emilia-Romagna)

Ingredients
Egg pasta - 4 recipes
Stock or water
Bolognese Meat Sauce - 1/2 recipe
Light cream - 1 1/4 cups
Butter - 3 tbsps
Grated parmesan cheese - 3/4 - 1 cup
Prepare the egg pasta and make tortellini noodles. Bring a large pan of stock or water to a fast boil and cook the tortellini for 5 minutes or until tender. Drain well and turn them into a baking dish.
Mix the hot bolognese sauce with the cream and butter, and pour over the noodles. Sprinkle with grated cheese, mix well and put into a moderately hot oven (400F) for a few minutes to heat through. Serve hot with plenty of additional grated parmesan.
