
Mixed Salad Liguria Style (Liguria)

Ingredients
Firm Ripe Tomatoes, peeled - 6 large
Sweet Pepper, cored and seeded - 1 large
Garlic, peeled - 3 cloves
Cucumber, peeled and thinly sliced - 1
Pearl onions, thinly sliced - 2
Basil leaves, chopped, to taste
Anchovy fillets, finely chopped - 2 large
Oregano - pinch
Black olives, pitted - 12
Hard boiled eggs , quartered - 2
Salt and pepper
Tuna fish in oil, flaked - 1 small can
Olive oil, to dress salad
Cut the tomatoes into wedges. Cut the pepper into strips. Rub the salad bowl generously with the garlic cloves. Arrange in the bowl with all the remaining ingredients, rather than order given, althought this is not arbitrary, adding the olive oil last of all, and gently stir it into the salad. Leave for about 1 hour before using. Remove the garlic cloves, stir the salad again gently and serve.
