
Mushrooms with Garlic and Oregano (Liguria)

Field mushrooms - 2 pounds
Olive oil - 1 cup
Garlic - 2 cloves
Oregano - pinch
Clean the mushrooms, take off the stems and cut the caps into medium thin slices. Heat the olive oil, add the garlic, 1 clove chopped and 1 clove whole, then the mushrooms. When the whole clove of garlic is brown, take it from the pan and discard it.
Sprinkle the mushrooms with a generous oinch if oregano, season to taste with salt and continue cooking over a gentle heat for 15-20 minutes or until the mushrooms are tender.
