Tripe with meat Sauce (Liguria)

Ingredients

Dressed Tripe - 2 pounds

Onion - 1

Carrot - 1

Celery - 2 stalks

Dried mushrooms - 1 1/2 oz

Meat Sauce 

Salt and pepper.

 

Wash the tripe, put into a pan with the onion, carrot and celery, and cover with boiling water. Cook until tender, between 2-3 hours depending on the type of tripe is being used.

While the tripe is cooking, soak the mushrooms in warm water for 30 minutes, drain them well and chop. 

When the tripe is tender, take it from the pan, drain thoroughly and cut into strips. Return it to the pan, add the meat sauce and the mushrooms and stir well. Add a few tbsps of the tripe liquid, season to taste with salt and pepper, cover and continue cooking over a low heat for 30 minutes longer, stirring frequently. 

Serves 6
