Green Ribbon Noodles Liguria Style (Liguria)

Ingredients

Olive oil - 2 1/2 tbsps

Onion, finely chopped - 1 small

Italian pork sausages, skinned and crumbled - 4 small

Calf's sweetbread, cooked and chopped - 1

Shreadded cooked borage and spinach - 1 cup

Salt

Grated parmesan cheese - 2 1/2 tbsps

All purpose flour - 5 cups

Eggs - 4

Dressing:

Well flavored mushroom sauce or gravy from roast beef

Grated parmesan cheese

 

Heat the oil and saute the onion until golden brown and soft. Add the sausage meat and the sweetbread, and when these are browned add the borage and spinach, and stir well. Season to taste with salt and leave for 5 minutes to develop flavors. Stir in the cheese, then rub everything through a fine sieve to make a paste.

Sift the flour onto a pastry board and make a well in the middle. Add the eggs, start working a little of the flour into them, and then add the meat and spinach paste. Continue to work  all the flour into the eggs and paste adding enough warm water to make a soft but firm, smooth dough. Knead the dough vigerously until elastic, keeping the board and your hands well floured. Roll the dough out into a thin sheet. Leave it to dry, uncovered, for 30 minutes, then cut into strips just under 1/2 inch wide. Leave the strips of dough to dry.

Bring 3 or 4 quarts of salted water to a bubbling boil in a large pan. Cook the noodles for 10 minutes, or until tender. Drain well and turn into a heated serving dish. Mix at once with a good mushroom sauce or gravy and serve with a large bowl of parmesan cheese.
