Yellow Diamonds

Ingredients

Fine cornmeal - 1 1/2 cups

All purpose flour - 2 cups

Seedless white raisins - 3/4 cup

Rum - 2/3 cup

Egg yolks - 3 large

Granulated sugar - 3/4 cup

Salt

Vanilla powder or vanilla extract to taste - pinch

Grated rind of 1 lemon

Butter, melted - 1 cup

Pine nuts - 1/3 cup

Butter for baking sheet

Confectioners sugar

 

Sift the cornmeal and flour together into a bowl. Soak the white raisins in rum until swollen. Drain and pat dry. Beat the egg yolks and sugar until smooth and thick. Gradually add the cornmeal and flour, a pinch of salt, the vanilla, grated rind and melted butter. Work to a smooth dough, knead well, then knead in the raisins and pine nuts. Roll out fairly thickly on a lightly floured board and cut into small diamond shapes. Arrange on well buttered baking sheets and bake in a moderate oven (375F) for about 20 minutes or until golden.

Sprinkle with confectioners sugar and eat either warm or cold.
