
Crab salad in the shell (Veneto)

Ingredients
Crabs - 3
Salt
Olive oil
Lemon - 1
Pepper
Parsley, finely chopped - 3 sprigs
Blanch the crabs in boiling salted water for 10-15 minutes. Leave them to cool. Clean them carefully without using undue pressure or squeezing and shell them. Wash the shells. Chop the crab meat, making sure there are no shell splinters left. Return to the washed shells. Dress with plenty of olive oil, lemon juice, salt and pepper and garnish with parsley. Serve well chilled.
