
Salt Cod Vicenza Style (Veneto)

Pre soaked salt cod- 2 pounds
Olive oil- 1 1/4 cups
Onions, sliced - 3
Garlic, finely chopped - 2 cloves
Parsley, finely chopped - 2-3 sprigs
Anchovy fillets, finely chopped - 3-4
Flour - 1/4 cup
Salt and pepper
Milk- 2 1/2 cups
Grated parmesan cheese- 2 1/2 tbsps
If the cod is not pre-soaked, soak it in fresh water for at least 24 hours, changing the water every 8 hours.
Skin and bone the cod, and cut it into large pieces. Heat the oil and fry the onion and garlic until they begin to brown. Add the parsley and anchovies. Lightly coat the pieces of cod with flour. Arrange them in a baking dish into which they will fit snugly, and pour over the onion mixture. Season with salt and pepper, cover with milk and sprinkle with cheese. Cover tightly and bake in a very slow oven (250F) for 4 to 5 hours, gently stirring from time to time. Serve with a stiff polenta, cut into slices.
