
Cream of Salt Cod (Veneto)

Ingredients
Pre-soaked salt cod - 2 1/2 pounds
Olive oil
Garlic, finely chopped - 2 cloves
Parsley, finely chopped - 2-3 sprigs
Salt and pepper
If the salt cod has not be pre-soaked, soak it in fresh water for at least 24 hours, changing the water every 8 hours.
Put the soaked cod into a large pan and cover with cold water. Bring to the boil slowly, remove the pan from the heat and leave the cod to soak for about 20 minutes. Drain, skin and bone the fish. Pound the flesh to a paste, gradually adding as much olive oil as it will absorb. Finally add the garlic, parsley, a little salt if necessary and generous pinch of pepper. Serve cold with polenta.
