Capon with Bamboo (Veneto)

Meat

Ingredients

Capon, dressed, about 6 pounds - 1

Finely chopped beef - 1 cup

Finely chopped guinea fowl meat - 1 cup

Pig's bladder - 1

Hollow bamboo cane - 1 small piece

Salt and pepper

 

Put the capon with the beef and guinea fowl meat into the pig's bladder, season with salt and pepper and sew up the bladder, leaving a hole just large enough in which to insert the bamboo cane. Bring a large pan of salted water to the boil and cook the capon in this for about 3 hours, or until no more steam escapes from the bamboo.

Take the bladder from the pan, open it up and take out the capon. Cut the bird into serving portions and serve immediately, together with the beef and guinea fowl meats.

Serves 8
