
Sweet and Sour Liver (Veneto)

Ingredients
Calf's liver, very thinly sliced- 2 pounds
Eggs - 1-2
Salt
Flour
Fine dry breadcrumbs
Butter- 3/4 cup
Juice of 1 large lemon
Sugar - 1 1/2 tsp
Beat the egg(s) with a pinch of salt. Lightly flour the slices of liver anddip them first into the beatenegg and then into the breadcrumbs. Heat the butter in a frying pan and quickly fry the liver until brown on both sides. Transfer to a heated serving dish and keep hot in a warm oven. Slowly heat the lemon juice with the sugarm stirring until the sugar is dissolved. Pour this mixture over the liver and serve hot.
