Rice with Raisins (Veneto)

Ingredients

Raisins, soaked in water or wine - 2/3 cup

Garlic - 2 cloves

Olive oil- 5 tablespoons

Parsley, finely chopped- 2-3 sprigs

Rice- 2 1/2 cups

Boiling stock- 10 cups

Grated parmesan cheese- 3/4 cup

 

Drain the raisin and pat them dry with a cloth. Leave one clove garlic whole and chop other finely. Fry both in oil together with the parsley in a large heavy pan. When the whole garlic clove browns, discard it and add the raisins.

Add the rice, stir it thoroughly into the oil and cook for 5 minutes, stirring gently all the time. Add a cup of boiling stock (or water) and when this has been absorbed, add another cup. Continue in this manner until the rice is just tender and still moist. Depending on the type of rice, up to 10 cups liquid will be used. Serve garnished with grated parmesan.

Serves 4-6.
