Rice with Pork Sausage (Veneto)

Meat

Ingredients

Pork sausage- 1/2 pound

Butter- 2 tbsps

Ham fat- 1/4 cup

Onion, finely chopped- 1 small

Dry white wine- 1/2 cup

Meat or chicken stock- 7-8 1/2 cups

Rice - 1 cup

Parsley, finely chopped - 2-3 sprigs

Grated Parmesan cheese - 3/4 cup

 

This dish is traditionally prepared with luganeghe, the famous homemade pure pork sausages of Treviso. Best quality commerically made sausages may be used instead. Skin the sausages and cut into pieces.

Heat the butter in a large pan and gently saute the ham fat and onion. When the onion begins to change color, add the sausage meat and let it brown. Pour in the wine and cook gently until it has evaporated. Add the hot stock, bring to a boil, sprinkle in the rice and cook slowly until it is tender, stirring frequently - about 20 minutes. When the rice is cooked and the liquid has been absorbed, stir in the parsley and the parmesan cheese. Serve immediately.

Serves 3-4.
