Venetian Savory Sauce (Veneto)

Ingredients

Chicken livers- 5 oz

Anchovy fillets- 3

Sausage- 4 oz

Grated rind of 1/2 lemon

Parsley, finely chopped- 2-3 sprigs

Olive oil- 2/3 cup

Garlic- 1 clove

Salt and pepper

Wine vinegar or dry white wine- 1/3 cup

Lemon Juice

 

The sausage traditionally used in this recipe is the sopressa veneta, which a made of a mixture of pork and beef.

Finely chop the chicken livers with the anchovy fillets and the sausage meat. Put this mixture in a bowl and add the lemon rind and parsley. Heat the oil, brow the garlic lightly and discard it, then add the chopped meat mixture. Season lightly with salt and pepper and let it simmer slowly, adding the wine vinegar and a few drops of lemon juice, until the sauce is smooth and fairly thick.

Serve hot with poultry or game.
